Hello and Recipe
Hello everyone. :-) I know it has been almost a week since I last posted. I have to apologize for that. I will begin posting again, tomorrow. For now, please accept this recipe as a consolation. :-)
RITZ CRACKER COOKIES
Ritz Crackers (or off brand butter cracker)
Creamy Peanut Butter
White or Chocolate Almond Bark
Vegetable Oil
Sprinkles, Decorations
OK. This is VERY simple. Place 1 teaspoon of peanut butter on a cracker and then "Sandwich" it with a second cracker. Make around 2 dozen. Melt almond bark in the microwave, slowly. Stir in between intervals. Once it is completely melted add about 2 teaspoons of vegetable oil into it and mix it in really well. This will help to "stretch" the chocolate further, and it will give it a nice shine.
Drop the "sandwiches" into the chocolate and turn with a fork. Lift with a fork and let the excess drip into the bowl. Lay on a cookie sheet lined with wax paper. If you wish to put on sprinkles or candy decorations do it now. Once you have a dozen or so on the pan place the pan into the freezer for about 5 minutes. Enjoy!! :-)
Another variation on the decoration is to cover it in white almond bark and then when you remove it from the freezer you drizzle the chocolate almond bark on it and freeze again. Just makes it look more "gourmet". :-) These are really great for a cookie exchange. :-)

You are totally forgiven for not posting. These sound great. We always make a bunch of goodies for Christmas. I can't wait to try these. Thanks for sharing.
